Phuket was an international trading hub from the era of ancient seafarers up till the colonial age. This made the island a historic cultural melting pot that over time became a home to several ethnicities, including Southern Thai, Chinese, Malay and Peranakan communities.
The Peranakan heritage is particularly notable in Phuket. A unique Southeast Asian culture shaped by generations of interaction between Chinese migrants and local communities, Peranakan culture has contributed to Phuket’s prosperity since around the 1800s, from the island’s early tin-mining industry to the establishment of modern-day businesses.
The Peranakan flavour palate, distinguished by its layering of complex flavour, is deeply integrated into Phuket’s culinary tradition; which has cultivated a skilful blend of Chinese cooking techniques with local Southern Thai ingredients for generations.

Meanwhile, the island’s proximity to the Malay Peninsula and Indonesian archipelago also brought the love for zesty spices. As such, Phuket cooking has developed an emphasis for bold, punchy, complex flavours rather than the more balanced flavour profile often associated with many other regional Thai cuisines. Fiery heat, zesty sour, savoury depth, rich aromas and umami seafood flavours are the hallmarks of Phuket cuisine, with generous usage of shrimp paste, tamarind paste, lemongrass, tropical fruits like pineapple and lime, bird’s eye chillies, as well as a variety of herbs and aromatic spices.

Braised in a savoury-sweet caramelised sauce blend, Moo Hong is a classic Phuket pork belly stew reminiscent of the Chinese braised pork dishes such as Dong Po Rou, but imbued with distinctive Southern Thai flavour, particularly in the use of aromatic coriander roots and palm sugar. The bold sauce blend is patiently simmered until fully infused into the pork belly, resulting in a tender, juicy and umami taste. Typically enjoyed with fragrant steamed Jasmine rice.

Phuket-style Mee Hokkien carries the tradition of Chinese Min cuisine, and is a popular local street food. A stir-fry of springy yellow wheat noodles with a generous topping of pork, prawns, fish balls, squid, egg and crunchy leafy greens. Two variants are commonly enjoyed at Phuket food courts and local eateries: the ‘dry’ fried noodles lightly coated in a savoury, scrumptious sauce, and the gravy version, served with thick, creamy umami-rich broth.

Seasoned with the warm turmeric aroma of Southern Thai Yellow Curry paste, enriched with coconut milk, and infused with the peppery fragrance of wild betel leaves, Phuket Crab Curry is an iconic local specialty with a piquant, creamy and savoury flavour that complements the crab meat’s natural succulent freshness. The dish is traditionally paired with soft, blanched Khanom Jeen rice noodles rather than steamed rice. The delicate noodles absorb the crab curry’s richness and develop a full-bodied flavour with a pleasant, lingering warmth as you slurp.

Another Phuket curry specialty served with Khanom Jeen noodles is the Gaeng Tai Pla. This fiery, savoury-sour and boldly pungent curry is made with generous chunks of fish meat and tai pla, a fermented fish entrail sauce, blended with fresh chillies, shrimp paste, lemongrass, peppercorn, and garlic. The intense flavour and complex aroma complement the fish’s savoury taste, accompanied by vegetables like sweet baby corn, carrot, eggplant and bamboo shoots for a thrilling and sumptuous meal.
