Step 1: Blend the ground black pepper with fish sauce.
Step 2: Lather the blended fish sauce on the beef steak, and coat it thoroughly. Then let the steak rest and soak up the flavour, for about 5 minutes.
Step 3: Grill the steak on medium-high heat. Cook for about 3 minutes per side, until the meat is tender or lightly charred and also depending on how you like your steak. Take it out and set aside to rest.
Step 4: Heat up 2 tablespoons of cooking oil in your frying pan, then put in the Green Curry paste and break it up. Add in diced carrot and green beans, and stir-fry till the paste coats the veggies – just 2 to 3 minutes will do.
Step 5: Add coconut milk, a dash of water, a pinch of sugar and fish sauce to the pan, and stir gently until the mixture boils. Then lower the heat to simmer, until the mix thickens. Add some basil leaves and stir thoroughly.
