- Combine the sauce ingredients together in a small bowl and set aside.
- Season pork belly with salt and pepper and cook in a hot pan for a few mins. Then add in onions and cook until translucent.
- In the meantime, cook udon noodles by following the instructions on the back of the package and drain noodles well.
- Add in the cabbage and capsicum and cook for a couple mins.
- Add in the beansprouts and the noodles. Pour sauce over the noodles and toss well.
