- In a mixing bowl, whisk together the eggs, fish sauce, white pepper and 1 tbsp oil.
- Once well combined, stir through Thai basil and chilli.
- Add remaining 2 tbsp oil to a pan and heat over medium-high heat.
- Pour the egg mixture into the pan. Slowly stir with a wooden spoon or spatula until the underside is cooked.
- Flip the omelette over and cook on the other side.
