Step 1:
With a paring knife, carefully make some small cuts along the prawns’ undersides. Then place each prawn on your working surface and press down to flatten it.
Step 2:
Put the flour, eggs and spicy panko breadcrumbs in 3 separate bowls.
Step 3:
Hold each prawn by the tail, and dip it into the flour, followed by the egg and finally coat in with the spicy panko breadcrumbs.
Step 4:
Heat oil in a wok or pot to 180°C. Dip in and fry the prawns in batches for 1–2 minutes until golden brown.
Step 5:
Serve your spicy Ebi Fry with shredded cabbage and enjoy!
