To Prep
- Mix minced pork with salt, sugar, fish sauce and pepper until well combined.
- Heat up wok with oil and fry minced pork till cooked. Set aside.
To Make Minced Pork Version
- On a cast iron grill or skillet, place a piece of rice paper on and quickly ladle a ladleful of beaten egg over rice paper. Spread the beaten egg all over the surface of rice paper while pressing it down.
- Once the egg starts to turn opaque, spoon minced pork all over the surface.
- Squeeze some siracha on top and sprinkle some chopped spring onion over.
- Let it crisp up for about 2-3 mins on the grill. Serve immediately.
To Make Pork Floss Version
- For pork floss topping, do the same for the rice paper wrap and egg base and spoon pork floss all over and topped with some Japanese mayonnaise, chopped spring onions.
- Sprinkle with some toasted sesame seeds. Serve immediately.
- Repeat process for remaining rice papers and topping.
