To Make
- Bring the water to a boil in a heavy bottom pot. Add the turmeric, garlic, lemongrass, galangal, shallots, kaffir lime leaves, and Thai chillies. Bring to boil again and lower to medium heat. Cover and simmer for 10 minutes.

- Increase the heat to high and add the chicken drumsticks. Bring back to boil, skimming off any foam that rises to the surface.

- Reduce heat to medium, cover and simmer for 10-12 minutes, or until the chicken is cooked through and tender.
- Stir in tamarind paste, then season with salt and fish sauce to taste.

- Serve hot with chopped coriander and steamed rice.
