To Prep

1. Place the dried chillies in a bowl of warm water and set aside for 3-4 mins, then drain.
2. Place the drained chillies, garlic, lemongrass, shallots, shrimp paste, kaffir lime rind and water in a blender. Blend to a smooth paste.
