- Combine marinade ingredients. Marinate beef for 15 mins.
- Meanwhile, place noodles in a deep bowl and cover with boiling water. Allow to stand for 2-3 mins until separated. Drain and set aside.
- In a wok or frying pan, heat oil.
- Add garlic, ginger and onion. Stir-fry until fragrant.
- Add beef to stir-fry for 3 mins. Add noodles, Shiitake mushrooms, wood ear fungus, spring onions, soy and oyster sauce.
- Stir-fry for another 2-3 mins and serve immediately.
