- To make the seasoned minced meat, combine the meat, oyster sauce, Maggi Seasoning, garlic (if using) and mix well. In a sauce pan, add 1 tbsp of water and bring to boil. Add in the meat mixture, stirring constantly to break up any lumps. When the meat is fully cooked, remove from heat and stir in the spring onions. Set aside.
- Thinly slice the Chinese sausage and the Vietnamese ham. Lightly greased a pan over medium heat, and then sear the Chinese sausage and Vietnamese ham just until they are browned. Remove from heat when the minced meat is fully cooked. Set aside.
- Heat a serving dish or a pan over medium-low heat. Melt butter and crack two eggs into the serving dish. Lay the prepared toppings (Chinese sausage, Vietnamese ham, seasoned minced meat) on the eggs and cover with lid. Let the eggs steam for a few minutes until the whites are cooked and the yolk done according to your liking. keep the heat quite low to prevent the bottom of the eggs from burning.
- Once cooked according to your liking, remove from heat and garnish with spring onions. You may also sprinkle some white or black pepper, drizzle some sriracha sauce or Maggi seasoning too if you wish.
