To Make
- Loosen the noodles with warm water.
- Heat the pan with oil and cook the pork slices. Once the pork is cooked through, add the vegetables, followed by soba noodles.
- Toss a few times to mix the ingredients then add tonkatsu sauce and toss a few more times to coat the ingredients with the sauce.
- In a separate pan, make a thin sheet of omelette. Place the noodles from step 3 in the centre of the omelette and fold the sheet.
- Serve on a plate with tonkatsu sauce and mayonnaise. Sprinkle some ao nori, bonito flake, and pickled red ginger over the top to finish off.
