To Cook
- Heat oil in fry pan, slightly brown both sides of eggplant rounds and set aside.
- In a bowl, mix ingredients for wasabi miso paste and whisk well.
- Pre-heat oven to 220˚C, brush top of eggplant rounds with paste and grill for 20-25 mins.
- Garnish with spring onions and sprinkle with white sesame seeds, serve.
