To Make
- Lightly coat egg slices with cornflour. Heat 1 tbsp oil in a frying pan over medium heat and pan-fry the eggs in batches until both sides are golden and slightly crisp. Remove and set aside.

- In the same pan, add 1 tbsp oil. Sauté garlic, fermented black beans, green and bird’s eye chillies until fragrant. Add spring onion and toss quickly.

- Pour in the seasoning sauce and mix well.

- Return fried egg slices to the pan. Gently toss to coat each piece evenly in the sauce without breaking the eggs. Serve hot.
