To Cook

1. Heat oil in a pan or wok and stir fry eggs until just set. Toss in rice and add seasoning mix ingredients. Stir well.
2. Add sea urchin and stir fry until heated through.
3. Sprinkle with spring onions and transfer to serving dish.
