This heavenly Thai steamed fish recipe is perfect for any fresh white fish. Sour, spicy, and garlicky, these exciting flavours make any dish come to life – a signature of the Thai cuisine. Ingredients:

2-3 drumsticks (depending on size of drumsticks)
250ml water
500g whole fresh fish (bream, snapper, barramundi or any whole fish)
12-15 small red chillies (chopped) (or to taste)
10 cloves garlic (chopped coarsely, depending on the size the garlic can be reduced)
2 tsp minced coriander root
1 tbsp fish sauce
2 tbsp lime juice

For Garnishing

60g Chinese celery (cut to 1cm length)
1 fresh red chilli (cut into strips)
½ lime (sliced thinly)




Steps:
  1. Boil chicken for 30 mins to prepare the chicken stock. Alternatively, you may also use store-bought chicken stock. Then, set aside.
  2. Clean fish and make a few slits on both sides. Place fish in a deep dish.
  3. Mix chicken stock with red chillies, garlic, coriander root, fish sauce and lime juice. Set aside.
  4. Bring water to a rolling boil to prepare for steaming then reduce heat to moderate. Pour stock over fish.
  5. Spread Chinese celery on top and steam fish for 10 mins or till fish is cooked.
  6. Garnish with fresh Chinese celery, chilli strips and lime slices before serving. Serve hot with rice.
