To Make
- Rinse the dried shrimp, then toast and grind into a fine floss.

- Toasted the shredded coconut until golden brown.

- Remove the pomelo flesh from membranes, keeping the segments in large chunks. Set aside.
- Mix all the dressing ingredients until the sugar dissolves. Set aside.
- Place all the main ingredients into a mixing bowl. Pour over the dressing and toss gently to combine, taking care not to break up the pomelo.

- Serve immediately.
