To Make
- Heat a pan over medium-high heat. Add lemongrass, whole lime leaves and glutinous rice. Stir for about 5 minutes until the herbs dry and the rice turns a dark golden brown.
- Let the mixture cool, then pound in a mortar and pestle until it forms a coarse powder. Set aside.
- In a pot over medium heat, add pork and water. Cook and stir until the pork is fully cooked, about 5 minutes.
- Add half the toasted rice powder, all seasoning ingredients, herbs, and red onion. Mix thoroughly.
- Serve with fresh cucumber and snake beans on the side.
