To Make
- Cook the noodles according to package instructions, then drain and set aside.
- Heat a small saucepan of water and bring to the boil. Carefully lower eggs into water using a slotted spoon and boil for 5 ½ minutes. Remove eggs from saucepan and allow to cool slightly before peeling. Set aside.
- Heat oil in a large pan or wok over medium heat. Add the mince and cook until browned and all liquid has evaporated.
- Add garlic and cook through for 1 minute. Add soy sauce, fish sauce and oyster sauce, stirring to coat the mince.
- Add the carrot, snow peas and cabbage, cooking for another 2-3 minutes until vegetables are tender but still crisp.
- Toss through the cooked noodles until well combined and heated through.
- Serve with soft boiled egg, halved, spring onion and sesame seeds on top.
