To Make
- In a mixing bowl, combine minced pork, shiitake mushrooms, ginger, garlic, spring onion, oyster sauce, white pepper, salt, cooking wine, and chicken stock. Stir in one direction until the mixture becomes soft and sticky.

- Divide the pork mixture evenly into 4 small heatproof bowls and cover each bowl with a wonton wrapper.

- Steam the bowls over high heat for 10-12 minutes.

- Top with julienned ginger and chopped spring onion. Drizzle with chilli oil and light soy sauce and serve hot.
