To Make
- Combine all ingredients for pork marinade in a bowl, add pork and stir until well coated. Cover and marinate for at least 24 hours.
- Meanwhile, to make the pickled radish. Place thinly sliced radishes in a bowl and pour over the pickle marinade ingredients.
- Once pork is ready, add pork pieces to air fryer (whilst reserving the marinade) and cook at 200 degrees Celsius for 3 minutes on each side. Baste with reserved marinade and cook again for 2-3 min each side, and until nicely charred on the corners.
- Meanwhile, combine all ingredients for salad dressing and keep aside.
- To serve, pat dry pickled radish and assemble remaining salad ingredients and drizzle with your prepared dressing. Serve pork with a warm bowl of rice.
