- Mix miso, mirin, sake, sugar, and soy sauce in a bowl. Marinade chicken thighs in miso mixture for at least 3 hours, or overnight.
- Preheat oven to 220°C. Use paper towels to wipe marinade off from the chicken and place it on oiled aluminium foil spread over a sheet pan. If the marinade is not wiped off from the chicken, it would make the dish saltier.
- Bake for 15 mins, turn over and bake 10-15 mins more until cooked through.
