- Combine eggs, oyster sauce, salt and pepper in a bowl and mix well.
- Heat 2 tbsp of oil in a frying pan.
- Add onion and bitter melon, then stir fry until both are soft.
- Add pickled mustard and chillies and stir.
- Reduce heat to medium low and drizzle remaining oil around the pan.
- Add egg mixture and cook until golden brown.
- Flip omelette over and cook the other side until golden brown.
- Serve with white rice, and garnish with remaining chilli.
