To Cook
- Boil the water in a large pot. Blanch the trotters for 15 mins, then remove and soak in cold water.
- Heat sesame oil in a wok and sauté the ginger until fragrant. Add in trotter chunks and continue to fry for 1 min.
- Add in the black vinegar and palm sugar, bring to the boil.
- Add the eggs and reduce heat to simmer for 1 hr.
- Serve with steamed rice.
