Directions
To Prep Sate Tofu
- Place skewers in water to soak (to prevent burning).
- Combine marinade ingredients, and whisk until well combined.
- Place tofu cubes in a bowl and pour the marinade over, gently toss to combine. Leave to marinate in the fridge for 30 mins.
- Just before cooking, pat dry & spray lightly with oil.
To Prep Pork Belly Bites
- Season the pork bites with salt & pepper, spray lightly with oil.
To Make
- Preheat the air fryer to 200°C (a few minutes will do).
- Arrange the tofu and pork belly bites in a single layer, and bake for 15 mins, turning once (if necessary). Once cooked, remove and allow to cool a little, then thread the pieces onto skewers alternating the tofu and pork.
- Return to the air fryer and bake for 3 mins (to warm through).
To Make Sate Sauce
- While the tofu and pork are cooking, place sauce ingredients (except the lime juice) in a small pan, simmer until slightly thickened, add lime juice and adjust flavours to taste.
To Serve
- Arrange the vermicelli noodles, wombok, carrot, cucumber and red onion salad in a bowl (or substitute your favourite Thai salad recipe). Top with 2 skewers per serve, drizzle with sate sauce and garnish with tomato roses, lime slices and sprinkle with toasted peanuts, sliced red chilli and sliced spring onion.
