Wing Bean Salad

This is also very popular appetizer with mild taste and fragrance of roasted desiccated coconut, peanut and fried onion.

Ingredients:

1½ cup wing bean (blanched and sliced 0.5 cm thick)
½ cup cooked pork or chicken breast fillet (thinly sliced)
3-4 medium size whole prawns (blanched)
3 tbsp coconut milk
3 tbsp ground roasted peanut
3 tbsp roasted desiccated coconut
3 tbsp crispy fried onion
few crispy fried dried small chilli (optional)

Seasoning sauce

2 fried large chilli (sliced and roasted)
¼ cup roasted sliced shallot
3 tbsp roasted sliced garlic
3 tbsp sugar
2 tbsp fish sauce
2 tbsp lime juice




Steps:
  1. For seasoning sauce, pound chilli, shallot and garlic finely, and mix together with sugar, fish sauce and lime juice in a small mixing bowl.
  2. Peel and devein the cooked prawns and thinly sliced.
  3. Place coconut milk over low heat until just boiling. Set asides.
  4. Combine wing beans, sliced porks, prawns and coconut milk in a large mixing bowl, mix gently. Add the seasoning sauce, mix well. Combine roasted peanut, desiccated coconut and 2 tbsp shallot sliced, mix through.
  5. Transfer to a serving plate, garnish with the remaining fried shallot, serve with salad such as lettuce.

Hint: Blanching with wing beans in highly boiling water with adding 1 tsp oil, press them down under boiling water for 2 mins. Remove from heat, drain, and soak immediately in very cool water until completely cool down. Drain and slice.
