Kimchi Kibokum Bap (Korean Fried Rice)


Experience all that Korean food is about with this delicious kimchi bokum bap. Perfectly fried rice, kimchi, meat and vegetables every time!

Ingredients:

1 cup well fermented kimchi (chopped)
¼ cup carrots (thinly sliced)
50g-100g scotch fillet (finely chopped)
1½ -2 cup cold cooked medium short grain rice
1 tbsp oil
1 tbsp sesame oil
2 tsp fish sauce
¼ cup spring onions (thinly sliced)
2-3 eggs (optional)
1 tbsp oil (optional)
salt and pepper




Steps:
  1. Add 1 tbsp oil and butter (or sesame oil) to a heated pan. Add kimchi and carrots and cook until kimchi starts to soften, about 5 mins.
  2. Push cooked kimchee to one side of the pan and add meat and cook quickly until meat is cooked, seasoning the meat with salt and pepper, should take about 2 mins. Stir kimchi and meat together to combine.
  3. Add rice to the meat and kimchee mixture and fry quickly over high heat until rice is well combined with fish sauce and spring onions, continuously stirring with a wooden spoon. Season the rice with salt and pepper.
  4. Add 1 tbsp oil to another heated frying pan and fry sunny-side-up eggs.
  5. Serve eggs on top of kimchi fried rice.

Note: You can substitute beef with ham, bacon or even sausage, and add other vegetables like corn or broccoli to fry with the kimchi.
