Glass Noodle Salad
Glass Noodle Salad Recipe


A refreshing appetizer, this glass noodle salad can be served as a light meal or as a healthy summer salad loaded with vegetables, prawns and chicken fillets.

Ingredients:

2 cups prepared glass noodle (cut short a bit)
½ cup cooked pork or chicken breast fillet (thinly sliced)
½ cup cooked whole prawns (peeled and deveined)
¼ cup dried prawns (fried)
1 cup tomatoes (cut wedged)
½ cup onion (cut wedged)
½ cup celery leaves (coarsely chopped)

Seasoning sauce

2 red chilli (coarsely sliced)
1½ tbsp coriander root
1½ tbsp pickled garlic cloves (thinly sliced)
3 tbsp sugar
2 tsp salt
⅓ cup vinegar
1 tbsp lime juice




Steps:
  1. For seasoning sauce, combine coriander root, garlic and chilli finely pound. Transfer to small saucepan, adding vinegar and sugar, mix well before placing over low heat, keep boiling and slightly thickened.
  2. Remove from heat and add lime juice, mix well.
  3. Combine pork fillet, prawns and onion in a mixing bowl, adding 2 tbsp seasoning sauce, gently mix through.
  4. Add glass noodle and 4 tbsp seasoning sauce, mix well. Combine tomatoes, celery leaves and the remaining seasoning sauce, gently mix well.
  5. Serve in a serving plate, top with dried prawns.

Hint : To prepare glass noodle, just rinse with water and drain, before boiling over high heat for 3 mins and remove, drained and soak immediately in very cold water, until completely cool down, and drain.
