Chicken, coconut and fresh greens Laksa

Ingredients :

Valcom Laksa Paste
TCC Light Coconut Milk
500g diced chicken breast
1 clove garlic
1 tablespoon fresh coriander
1 teaspoon fresh ginger
1ltr vegetable stock
Broccoli
Snap peas
Sweet corn
Shallots
Rice vermicelli noodles
1tsp Olive oil
Salt & Pepper

Cooking Steps :

Fry the Laksa paste with chicken, garlic, ginger and coriander in olive oil.

Once coated, add the vegetable stock and allow to simmer for 20mins

Add the vegetables and rice noodles and simmer for 2mins. Stir through the coconut milk last before serving.

Serve with coriander garnish.
