To Make
- Remove tofu from packet and place tofu on paper towel to drain water. Cut a square in the middle of each tofu and carve out tofu 1 cm deep. Cut carved out tofu into small pieces.
- Filling: Heat 1 tbsp cooking oil in frying pan. Fry garlic till slightly brown. Add pieces of tofu, diced mushroom, preserved radish, carrot and onion. Fry till cooked. Add seasoned soy sauce and salt and pepper to taste. Thicken it with cornflour and water.
- Stuff the filling back into the carved out tofu. Heat 2 tbsp cooking oil and pan fry tofu squares till slightly crispy.
- Sauce: Add all sauce ingredients and cook till slightly thickened.
- Pour sauce over crispy tofu squares. Garnish with shallots, coriander and toasted sesame seeds. Enjoy with chili sauce and boiled rice.
