To Prepare Supreme Soy Sauce Fried Rice
- In a sauce pan, heat up all the ingredients for supreme soy sauce till sugar is dissolved. Remove from heat and set aside.

- Heat up wok or frying pan with 1 tsp of pork lard and sear the cubed Chinese sausage for 3-4 mins under medium heat.
Dish up and set aside. - Beat eggs together with Shao Xing wine and salt.

- Using the same frying pan, heat 1 tbsp of pork lard and scramble the eggs.
Remove and set aside. - Add in remaining pork lard into frying pan, rice and pour the supreme soy sauce over. Stir till all rice grains are well coated with sauce.

- Toss in Chinese sausage, spring onions and scrambled egg s. Stir to mix well.

- Lastly, add in sesame seed oil and cook rice for 3 mins.

- Dish up and garnish with cut red chillies and spring onions.
