To Make

1. Cook the noodles according to package instructions, then drain and set aside.
2. Heat a small saucepan of water and bring to the boil. Carefully lower eggs into water using a slotted spoon and boil for 5 ½ minutes. Remove eggs from saucepan and allow to cool slightly before peeling. Set aside.
3. Heat oil in a large pan or wok over medium heat. Add the mince and cook until browned and all liquid has evaporated.
4. Add garlic and cook through for 1 minute. Add soy sauce, fish sauce and oyster sauce, stirring to coat the mince.
5. Add the carrot, snow peas and cabbage, cooking for another 2-3 minutes until vegetables are tender but still crisp.
6. Toss through the cooked noodles until well combined and heated through.
7. Serve with soft boiled egg, halved, spring onion and sesame seeds on top.
