To Make
- Preheat oven to 180°C fan forced.
- Season mushrooms with salt and pepper, then drizzle with oil.
- In a large bowl, combine rice, onion, coriander stems, garlic, ginger, sesame oil, soy sauce, 2½ tbsp ABC Sweet Soy Sauce Kecap Manis and pepper. Spoon rice mixture into the mushrooms and top with a tbsp of breadcrumbs, a sprinkle of sesame seeds then lightly spray with oil.
- Bake for 12-15 mins until mushrooms are tender and crumbs are golden. Turn oven to grill function on high heat for 3-4 mins for extra toasting if required.
- Transfer to a serving plate, sprinkle coriander leaves over mushrooms. Serve with spinach leaves, a wedge of lime and garnish with chilli.
