To Cook
- Rinse the mackerel fillet and pat dry with paper towels, then lightly coat with cornflour and set aside.
- In a non-stick frying pan, heat oil over medium heat. Place in the mackerel fillet and pan fry until both sides are golden brown and cooked through. Remove from pan and set aside.
- Bring seasoning sauce ingredients into the pan and heat slightly over low heat until sugar is dissolved. Pour over the fried mackerel.
- Heat oil in the pan over medium-low heat and sauté ginger shreds until golden brown. Top ginger shreds and the oil on the fish.
