To Prep
- In a mixing bowl, combine all the spice paste ingredients together until well incorporated. Marinate chicken pieces overnight in the refrigerator.
- Mix all the sauce ingredients together and set aside.
To Make
- Remove marinated chicken from refrigerator and leave it to come to room temperature.
- Heat up oil in a medium pot to 180°C.
- Fry a few pieces of chicken for 5-7 mins, do not over crowd and stirring periodically. Remove and set aside to drain.
- Fry second batch of chicken. Once the second batch is removed, place the first batch of fried chicken back into the oil and fry until golden brown and crispy. Remove and drain. Repeat the process until all chicken pieces are fried.
- Serve chicken while hot with dipping sauce.
