To Make
- Fill a medium saucepan with water and once it comes to a boil drop in all the pork belly cubes and cook for 2-3 mins until impurities floats up. Remove pork belly cubes and set aside.
- Heat up a heavy bottom pot with 1 tbsp of oil under medium heat.
- Sauté ginger slices until fragrant.
- Toss in pork belly cubes and sauté until all sides are slightly brown.
- Mix all the sauce ingredients together and pour onto pork belly. Let it comes to a boil and reduce heat to low and simmer with cover on for 45 mins to an hour.
- Garnish pork belly cubes with chopped spring onions and grated ginger and serve with steam short grain rice.
