To Make
- Place shredded pumpkin in a large bowl, add sugar and salt and mix well. Let it sit for 10-15 mins. Depending on the type of pumpkin, leaving it to sit will draw out moisture from the pumpkin. If there is not much moisture, add ¼ cup of water.
- Add flour and stir until the pumpkin is well-coated.
- Heat up a non-stick frying pan with a little oil, place a scoop of the pumpkin mixture and spread out into a flat disc. Fry for 2-3 mins until the surface turns brown. Flip over and cook the other side until brown. Remove and set aside. Repeat until the pumpkin mixture is used up.
- Mix ingredients for dipping sauce and serve with pumpkin pancakes.
