To Make
- Dry tofu with kitchen towel and set aside.
- Heat up frying pan with cooking oil to shallow fry tofu cubes until all sides are golden brown. Drain and set aside to cool.
- While tofu is frying, heat up a separate frying pan with 2 tbsp of oil and sauté garlic and chillies until fragrant.
- Add sauce and stir till combined. Let it come to a gentle boil, add crushed peanuts and sesame seeds.
- Arrange tofu cubes on a plate and top with blanched bean sprouts, shredded carrot and julienne cucumber.
- Spoon cooked sauce around the tofu. Garnish with some fried shallots and sprinkle with more crushed peanuts and sesame seeds.
