To Make
- To make the satay sauce, grind roasted peanuts, garlic, chilli and ginger in a food processor to make a paste. In a small bowl, add paste, hot water, Squid Brand Fish Sauce and sugar. Mix well until sugar is dissolved. Add more water to preferred consistency.
- Heat oil in a large frying pan over high medium heat. Add tofu slices and fry each side for 3-4 mins until golden and crispy.
- Arrange tofu slices, potatoes, green beans, eggs, cucumber, bean sprouts, cabbage and coriander leaves on a serving plate. Drizzle with satay sauce. Garnish with chopped peanuts and serve with lime wedges.
