To Prep
- Place cabbage in a bowl with salt, toss, and set aside for 10 minutes. Squeeze out excess liquid with your hands.
- Combine cabbage, pork, egg, and the rest of the filling ingredients in a bowl. Add seasoning and mix with chopsticks until well combined.
- In a separate bowl, mix together the crusting mixture ingredients until smooth. Set aside.
To Make
- Place one wrapper in your palm. Wet the edge with water.
- Add 1 tsp filling to the centre. Fold the wrapper over and pleat to seal. Repeat for all dumplings (makes about 20).
To Cook
- Heat 2 tsp oil in a non-stick pan over medium heat. Add dumplings, pressing each down to flatten the base. Cook for 2–3 minutes.
- Once the base is golden, pour in all of the crusting mixture and immediately cover with a lid. Cook on low heat for 8 minutes or until liquid evaporates.
- Remove the lid and continue cooking on low heat until the base becomes crisp.
- Transfer dumplings upside-down to a plate and serve with dipping sauce.
