To Make
- In a bowl, combine the chicken with all marinade ingredients. Mix well to coat and set aside for at least 30 minutes.

- Heat oil in a claypot over medium heat. Add shallots, ginger, garlic and the white part of the spring onion. Sauté until fragrant and slightly softened.

- Add the marinated chicken, searing for 3–4 minutes until lightly browned on the outside. Cover, reduce heat to low, and cook for 20–30 minutes, stirring occasionally.

- Once chicken is softened, add in sugar. Mix well and splash some cooking wine over before remove from stove. Garnish with the green part of the spring onion and serve hot.
