To Make
- In a medium mixing bowl, mix pork and all ingredients for the marinade together. Marinate pork strips for 2 hrs.
- Set up a dredging station of beaten eggs in one bowl and potato starch in a separate bowl. Dip pork strip into the beaten egg (ensuring even coverage all over) and then coat with potato starch.
- Heat up the air fryer for 2 mins at 180°C. Brush oil onto the basket. Arrange coated pork strips onto the air fryer basket with space around and crowding each other.
- Air fry chicken strips for 10-12 mins turning them mid-way for even browning. Cook in batches and cool on wire rack.
- Mix ketchup, brown sugar, sweet chilli sauce, light soy sauce, rice vinegar and salt together in a bowl.
- Heat up wok with oil and sauté garlic for 30 secs. Toss in cut capsicum, red capsicums and yellow onions. Fry for 2 mins. Toss in cut pineapples and fry for 30 secs.
- Pour in the sauce mix and fry for 1 min or until sauce starts bubbling.
- Toss in the air-fried pork strips and stir to coat.
- Serve with hot rice.
