Spicy Steamed Beef Tripe

Ingredients:

500g beef tripe (washed, sliced into strips, pre-boiled and drained)
2 tbsp oil
3 cloves garlic (finely minced)
1 tsp ginger (finely minced)
1 tbsp oyster sauce
1 tbsp soy sauce
2 tsp black bean sauce
2 tbsp Shaoxing wine / Chinese cooking wine
1 tsp five spice powder
1 tsp brown sugar
1 tsp paprika
¼ tsp cayenne pepper (increase to ½ tsp for spicier taste)
1 tsp sesame oil
2 cups water




Steps:
  1. Add oil into a wok or large pan over medium heat. Sauté garlic and ginger until fragrant. Put in tripe and fry for 2 mins. Add oyster sauce, soy sauce, black bean sauce, Shaoxing wine, five spice powder, brown sugar, paprika, cayenne pepper and sesame oil. Stir to mix well and cook for another 2 mins.
  2. Pour in water and bring to a boil. Then, turn the heat to medium and simmer for 30 mins or until sauce reduces slightly and thickens.
  3. Take the tripe out and transfer to a bamboo basket or steaming plate. Steam for 30 mins over high heat. Serve immediately with chilli sauce or light soy sauce.
