Coriander Chicken Curry

This aromatic chicken curry is easy to prepare and yet packed with complex, bold and rich flavours. The combination of ingredients from the coriander paste and spices such as garam masala, turmeric, cumin, cloves and cinnamon come together beautifully in this single dish, which is perfectly balanced with a bit of heat. Try this addictive comfort dish at home today! Serve with fragrant basmati rice, roti or naan. (Tip: Feel free to adjust the number of red chillies according to taste!)

Ingredients:

4 tbsp oil
1 tsp cumin seeds
4 cloves
1 cinnamon
2 large tomatoes
3 tbsp curry powder
1 tsp turmeric powder
1 tbsp chilli powder
1.2 kg chicken (chopped into small pieces)
4 potatoes (cut into bite-sized pieces)
100g coriander leaves
1 tsp garam masala powder
200ml coconut milk
375ml water

Coriander Paste

8cm ginger
10 garlic cloves
8 red chillies
3 red onions
50g coriander leaves




Steps:
  1. Blend all ingredients for coriander paste until fine.
  2. Heat oil in a wok or pot. Add in the cumin seeds, cloves and cinnamon; and fry until fragrant.
  3. Add in coriander paste and fry until fragrant.
  4. Add in tomatoes, curry powder, turmeric powder and chilli powder. Stir well.
  5. Add in chicken pieces, potatoes, coconut milk and water. Stir well.
  6. Add salt to taste. Cook slightly covered, until potatoes are done.
  7. Lastly, add in coriander leaves and garam masala powder. Cover slightly and cook for another 2 mins.
