Balinese Green Bean Salad
Balinese Green Bean Salad Recipe


This hearty green bean salad is a Balinese classic dish that is perfect for your weeknight dinner. Enjoy this with a steaming hot bowl of rice or pair it with a warm coconut milk soup.

Ingredients:

400g green beans (topped and tailed)
2 tbsp roasted sesame seeds
1 shallot (finely chopped)

Dressing

¾ cup roasted peanuts (skin on)
1 tsp sesame oil
1 medium red chilli (finely chopped)
1 clove garlic (finely chopped)
¼ tsp salt
30g palm sugar
3cm piece lemongrass (finely sliced)
4cm piece ginger (peeled and chopped)
1 lime (zested and juiced)
¼ tsp black pepper (cracked)
4 tbsp ABC Kecap Manis (Sweet Soy Sauce)
120ml coconut milk
¼ cup water
toasted shredded coconut (to garnish)
shredded kaffir lime leaves (to garnish)
lime wedges (to garnish)




Steps:
  1. Prepare beans and blanch in boiling salted water for 4 mins, then refresh in iced water until required.
  2. Using a large mortar and pestle crush the peanuts finely, add the sesame oil, chilli, garlic, salt, palm sugar, lemon grass, ginger, pepper, lime zest and juice until well combined.
  3. Add the ABC Kecap Manis and coconut milk to the peanut paste and blend until sauce is smooth. Taste and season with salt. Place sauce and water into a small pan and heat over a low heat stirring 2 mins.
  4. Combine the drained beans, sesame seeds and shallot in a large bowl.
  5. Arrange the beans on a large serving platter and pour over the peanut and coconut dressing.
  6. Garnish with toasted coconut and shredded kaffir lime leaves and Lime Wedges.
