Assam Fish Curry
Assam Fish Curry Recipe


Assam Pedas literally means "sour spicy". The Assam fish curry is a Malaysian classic curry that goes great with any Malaysian rice delicacy.

Ingredients:

5 pcs Spanish mackeral cutlets
2 lemongrass (smashed flat)
3 sprig curry leaves
1 tbsp curry powder
30g tamarind paste (mix with ¼ cup water and discard seed)
300ml water
8 okra (halved)
1 tomato (cut into wedges)
1 tsp salt or to taste
3 tsp sugar or to taste
4 tbsp cooking oil

Chilli paste

3 fresh red chili
2 shallots
3 garlic
A small knob ginger




Steps:
  1. Blend chilli paste ingredients into paste.
  2. Heat oil in a wok or pot, add in blended chili paste, sauté till fragrant.
  3. Add curry powder, curry leaves and lemongrass, stir to mix well.
  4. Add tamarind juice and tomato, bring to boil.
  5. Add the water and bring it all to boil again.
  6. Add fish cutlets, season with salt and sugar, cook fish till done.
  7. Add in okra and cook for 1 min.
  8. Dish your Assam Fish Curry and serve with rice.
