The only Melbourne branch of this acclaimed Japanese ramen chain definitely lives up to the hype. While it’s not the cozy ramen bar you’re probably used to, Ippudo’s modern, upmarket take on this classic Japanese noodle soup is certainly worth a try.
The rich, full-bodied Hakata tonkotsu broth is the star here. Cooked over 18 hours, the soup has an incredible depth of flavour and a perfectly silky texture. Served in a big bowl with al dente noodles (made with a special type of flour to yield perfect springy and chewy texture) and a whole range of toppings, you’ll be wanting to come back to try all the dishes you couldn’t fit in the first time around.
Try any of the ramen bowls that comes with the super tender, slow-cooked pork chashu, and be sure to add on a soy marinated egg—the creamy, custard-like texture of the yolk perfectly balances the salty, umami flavours of the broth.
