Yellow Curry Fried Rice

Another Thai favourite - yellow curry fried rice. Easy to put together and it'll be over before you know it!

Ingredients:

400g chicken fillet (sliced)
4 tbsp Valcom Yellow Curry Paste Yellow
2 cup Golden Phoenix Jasmine Rice (cooked and cooled)
2 tbsp vegetable oil
3 tbsp Squid Brand Fish Sauce
1 tbsp sugar
1 large onion (sliced)
1-2 stalks spring onion (sliced as garnish)




Steps:
  1. Stir-fry yellow curry paste with hot oil until fragrant.
  2. Add meat, stir-fry over high heat, and then add fish sauce and sugar. Stir-fry until the meat is cooked before adding onion.
  3. Add cooked rice and stir through, sprinkle spring onion just before removing from heat.

Tips: for balanced diet, some peas or paprika can be added with onion. For better fried rice results, cook rice 1 day ahead and refrigerate.
