Yellow Curry of Bugs, Sweet Pumpkin and Tomato Recipe


Scrumptious baylobsters infused with the flavours of Thai yellow curry.

Ingredients:

4-6 baylobsters (Moreton Bay or Balmain) also known as bugs or flathead lobster, cut lengthwise
4-6 long red chillies, cut lengthwise
6-8 Valcom Kaffir lime leaves
1-2 ripe tomatoes
1 cup butternut pumpkin, cut into small thin slivers
1 cup Thai sweet basil leaves
2 bulbs lemongrass
4 tbsp safflower oil
1 tbsp Jeeny's Palm sugar
1 tbsp Squid Fish sauce
560ml Chaokoh Coconut cream

Curry paste

¼ cup ginger (peeled and chopped)
½ cup garlic
½ cup red shallots
2 tbsp coriander seeds (roasted* and ground)




Steps:
  1. Combine all curry paste ingredients and blend in a food processor until smooth.
  2. In a saucepan large enough to house the baylobsters, heat oil to medium.
  3. Add the curry paste and fry off, stirring to prevent sticking.
  4. Add the pumpkin, chillies, lime leaves and lemon grass, and stir.
  5. Add the palm sugar, and allow to caramelise slightly.
  6. Add the coconut cream, baylobsters (flesh side down) and tomato. Allow to simmer gently for 2-4 mins until baylobsters are cooked.
  7. When the ingredients are cooked and the curry is slightly thickened, add the basil and serve immediately. Garnish with coriander sprigs and serve with Jasmine rice.

*The easiest way to roast the seeds and powder is to fry them in a dry pan over low heat until the fragrance is juts beginning to be released (be careful not to burn them). Allow to cool and then grind in a food processor or coffee grinder.
