Yakitori (Grilled Chicken)


Yakitori literally means "grilled chicken" - kebabs of chicken grilled on a BBQ and basted with a sweet soy-based sauce. It is best made with the leg or thigh meat as this is juicier than fine-textured breast meat.

Serves:3 to 4

Ingredients:

600g chicken thigh fillets (cut into 2.5cm dice)
Bamboo skewers

Yakitori sauce:

6 tbsp sake
¾ cup dark soy sauce
3 tbsp mirin seasoning
2 tbsp sugar




Steps:
  1. Combine the sauce ingredients in a saucepan and bring to the boil to burn off the alcohol.
  2. Thread the chicken onto skewers and brush with the yakitori sauce. Grill, basting regularly until cooked.
  3. Your yakitori is ready!
