Konnyaku Noodles Recipe - XO Konnyaku Bundles with Assorted Vegetables


A lovely Chinese fusion Konnyaku noodle dish that is served with assorted colourful and healthy veggies tossed in XO sauce. Try it!

Ingredients:

200g Konnyaku bundles (glucomannan noodles)
120g baby asparagus (cut into 2cm lengths)
50g baby carrot (peeled)
50g baby corn
50g Enoki mushrooms (trim off tail)
50g Hon shimeji mushrooms (trim off tail, or can substitute with king oyster mushrooms or straw mushrooms)
1 chicken stock

Seasoning mix

2 tbsp Lee Kum Kee XO Sauce
1 tbsp Lee Kum Kee Premiium Oyster Sauce
2 tbsp Lee Kum Kee Chicken Bouillon Powder
1lt hot water




Steps:
  1. Cook all ingredients in chicken stock for about 3 mins until tender.
  2. Add seasoning mix and stir well. Serve hot in individual bowls and serve with rice.
